Spiced Seeds & Nuts

We've amped up the flavour in this roasted seed and nut mix with a combo of lively spices and herbs! Its warming, savoury, subtly sweet and incredibly addictive. Mix into roast veggie salads, top soups for a savoury crunch or simply serve as a starter for your next dinner party.
You'll need:
- 250g of your favourite seeds and nuts (roughly chop nuts, seeds can remain whole)
- 1.5 TBSP sunflower oil
- 1/2 TBSP maple syrup
- 1/2 tsp salt
Stir through spice mix:
- 2 sprigs rosemary (leaves removed and finely chopped)
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp ground coriander
- pinch of cayenne pepper (or more if you like it hot!)
Method
- Preheat oven to 170C
- line a baking tray with parchment paper
- combine seeds, nuts, oil, maple and salt in a large bowl and mix thoroughly then transfer to baking tray and place into oven for 10mins. Reserve bowl
- In the meantime put all herb and spice mix into the same bowl
- At the 10min mark carefully remove the tray and transfer nuts and seeds with a spatula to the bowl with spices. Mix then return to tray and back into the oven for 5mins
- Remove and allow to cool on a wire rack. Serve warm or transfer to a airtight container when completely cool
