Spiced Seeds & Nuts

We've amped up the flavour in this roasted seed and nut mix with a combo of lively spices and herbs! Its warming, savoury, subtly sweet and incredibly addictive. Mix into roast veggie salads, top soups for a savoury crunch or simply serve as a starter for your next dinner party.

You'll need:

  • 250g of your favourite seeds and nuts (roughly chop nuts, seeds can remain whole)
  • 1.5 TBSP sunflower oil
  • 1/2 TBSP maple syrup
  • 1/2 tsp salt

Stir through spice mix:

  • 2 sprigs rosemary (leaves removed and finely chopped)
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp ground coriander 
  • pinch of cayenne pepper (or more if you like it hot!)

Method

  1. Preheat oven to 170C
  2. line a baking tray with parchment paper 
  3. combine seeds, nuts, oil, maple and salt in a large bowl and mix thoroughly then transfer to baking tray and place into oven for 10mins. Reserve bowl
  4. In the meantime put all herb and spice mix into the same bowl
  5. At the 10min mark carefully remove the tray and transfer nuts and seeds with a spatula to the bowl with spices. Mix then return to tray and back into the oven for 5mins
  6. Remove and allow to cool on a wire rack. Serve warm or transfer to a airtight container when completely cool
