You'll need:

  • 250g plain greek youghurt (thick pot-set is best)
  • 250g mascarpone cheese
  • zest and juice of 1 large lemon plus extra zest if you want to garnish
  • 1TBSP honey (melt until runny)
  • 1TBSP hazelnut/apricot kernel/macadamia oil
  • Enough serves of seasonal fruit salad
  • optional: 1TBSP finely sliced fresh herbs like mint, basil etc

Method:

  1. Put yoghurt, mascarpone, zest and juice of 1 lemon, 1TBSP of honey and 1TBSP of Pepo oil into a large mixing bowl.
  2. whisk vigorously until incorporated and thickened to desired consistency 
  3. Spoon yoghurt to cover the base of your serving bowls, top with fruit salad and then garnish with zest and herbs if desired
