Loaded Nachos with Smokey Bean and tomato salsa

Friends coming over? Need a simple sharing snack recipe thats' also quite filling? This Loaded Nachos recipe is riff on our smokey beans dish is but with rich Mexican-spiced flavour - think smokey tomato salsa beefed up with filling beans! Layer over corn chips, avocado, melted cheese and all the delicious trimmings like corriander, lime wedges and jalepenos. Feeling the need to dial up the spice? No worries! Just add some Edible Alchemy Hot sauce... Bravo!

 For the bean salsa you'll need:

  • 1 brown onion diced
  • 2 TBSP Pecan oil  (Hazelnut or Almond oil are good alternatives)
  • 3 cloves of garlic minced
  • 2 tsp smoked paprika
  • 2 tsp cumin
  • 2 tsp oregano powder
  • 1 tsp chilli flakes
  • 1/2tsp cayenne pepper (omit if you don't want it spicy)
  • 1 can cannellini beans
  • 1 can mixed beans (I used Mexican bean bean mix)
  • 1 can crushed tomatoes
  • 3 TBSP Tomato paste or thick tomato sauce
  • 1tsp maple syrup
  • salt and pepper to taste
  • 1/2 cup water

Nacho toppings:

  • 1 large bag of good quality corn chips
  • Shredded cheese of choice
  • 1/2 tub sour cream to dollop
  • 1 large avocado cubed 
  • 2 limes cut into wedges
  • handful of coriander torn into small peices for garnish
  • pickled jalapeños 

Making the bean salsa:

  1. Add Pecan oil to a large skillet over medium heat
  2. Add onions and sauté for 2mins then add minced garlic and continue to fry for another 3-4mins until translucent 
  3. Add all spices and fry for another minute
  4. Add tinned tomatoes, tomato paste, beans and water then bring to a boil.
  5. Reduce heat to low-medium then add maple syrup, a couple of pinches of salt and cracked pepper
  6. Cook until sauce thickens to your liking (10-15mins) and adjust salt and pepper to taste.

Assembling Nachos:

  1. Preheat the oven to 200 degrees whilst you assemble
  2. On a large ceramic dish or deep oven tray layout corn chips followed by a small amount of shredded cheese, generous dollops of bean salsa, jalapenos & more shredded cheese. Bake for approx 10mins until cheese has melted and bubbling and tortilla chips are golden
  3. Top with all your favourite toppings, give everyone a serving plate and let the ravenous crowd awaiting serve themselves!
