Omega Hipster Slaw Salad

A good Australian classic with a modern healthy twist.
You'll need:
- 1 Tbs raspberry vinegar
- 1 Tbs whole-grain mustard
- 1 Tbs raw honey or coconut nectar
- 1 Tbs Sunflower Oil
- 2 Tbs Walnut Oil
- Salt and freshly ground pepper
- 4 cups finely shredded cabbage
- 2 cups finely shredded raw brussels sprouts
- 1 large carrot, grated
- 1/2 small red onion, thinly sliced crosswise
- 1/4 cup snipped chives, parsley and or coriander
- hemp seeds
Method:
- In a jar, shake the vinegar, whole-grain mustard, honey or coconut nectar, oils, salt and pepper together for the dressing.
- In a large bowl mix together the shredded cabbage, shredded Brussels sprouts, carrot, onion and dressing.
- Toss well.
- Refrigerate until chilled, about 10 minutes.
- Transfer to a medium bowl then sprinkle with hemp seeds to serve.
