Winter Salad Bowl

You'll need:

  • 100g natural or roasted pumpkin seeds
  • 2 large carrots coarsely grated
  • 200g spinach leaves, washed and thinly sliced
  • 1 red onion, thinly sliced
  • 1/2 red cabbage, very thinly sliced (the trick to cabbage is very thin slices!)
  • 1 green capsicum, thinly sliced
  • 2 Tbs pear or apple cider vinegar
  • 6 Tbs almond oil
  • 1/2 tsp chilli flakes
  • 1 Tbs raw honey, runny
  • salt and pepper for seasoning
Method:
  1. You can use either natural/raw or roasted pumpkin seeds as they are. If you want the extra special flavour lightly toast the natural/raw pumpkin seeds in a dry frying pan.
  2. Place the carrots, spinach, onion, cabbage, pepper and pumpkin seeds in a bowl and toss together to mix.
  3. In a separate bowl, whisk together the vinegar, almond oil, chilli and honey. Season with salt and pepper and pour over the salad. Mix well and transfer to a serving bowl.

PS... If you are preparing this ahead of time, keep the dressing separate and toss into the salad just before serving, otherwise it will become too soggy.
