Vegetable Tray Bake with Sunflour

Variety of vegetables, quickly thrown together with little quantity of runny batter, based on eggs and SunFlour, make flexible and easy meal that takes 10-15 minutes to prepare and 30-50 minutes to bake. The dish can be baked as a tray bake or in individual portions, that can be served straight from the oven. Baking provides 2 advantages to very popular vegetable fritters, which use thicker batter with increased quantity of a dry ingredient and take more time to be individually fried. This particular tray bake vegetable slice is grain free, and can be made in dairy free version as well, when butter is replaced with plant oil and dairy free cheese used.

    You'll need:

    • 4 large eggs
    • 2 heaped serving spoons Sunflour
    • 3 zucchini
    • 3 carrots
    • 1 or half leek
    • 1 small capsicum (1/2 large)
    • 1/2 cup shredded smoked speck or bacon
    • 7-8 cherry tomatoes
    • 1 Tbs sunflower seed oil
    • 1 Tbs butter
    • 1 heaped table spoon of chilli peppers and garlic paste
    • 1/2 cup grated cheese (I used Tasty cheese)
    • sea salt and black pepper for seasoning to taste
    • sesame seeds for decoration

    Quantity of vegetables and their ratios depend on the size of baking tray/dish.

    Smoked speck can be replaced by cooked chicken, turkey, tender, slowly cooked meat pieces. For vegetarian version use canned beans, cooked lentils or sautéed mushrooms. Any leftovers can be used to be added to vegetable mix.

    • unsalted butter to grease the dish
    • 2 table spoons quick polenta

    Vegetable Tray Bake with SunFlour Batter

    Method:

    1. prepare baking tray, grease it with butter and use quick polenta
    2. grate zucchini and carrots
    3. cut (slice on mandoline slicer) capsicum in short strips
    4. heat butter and sunflower seed oil in a frying pan
    5. add leek, cut in semi-circles and smoked speck
    6. cook them on medium heat until leek becomes soft and translucent, season with salt if necessary
    7. add fried leek and speck to vegetable mix
    8. mix eggs with garlic and chilli paste and sunflour, add 2 table spoons of water
    9. add batter to vegetable mix
    10. mix all ingredients together
    11. season with sea salt and pepper, consider overall seasoning depending on how salty speck is and quantity of garlic and chilli paste
    12. place the mixture into prepared baking dish
    13. press the mixture down to make air pockets free layer
    14. apply grated cheese
    15. insert cherry tomatoes cut in halves
    16. season tomatoes with sea salt
    17. apply sesame seeds
    18. bake in preheated to 170C fan forced oven, it took 50 minutes for my tray bake
    19. let the bake rest for 10-15 minutes
    20. slice and serve as a main or side dish
