Banana Blueberry Picklets

This is the recipe I use to make Luka some healthy, tasty pancakes which he always loves. I modified it from a couple of recipes as I love to experiment with whatever I have in the cupboard.
These pancakes are:
- Sugar Free
- Dairy Free
- Protein rich
- Simple to make!
You'll need:
- 1 large or 2 small ripe bananas
- 100g blueberries
- 1 1/3 self raising flour
- 2/3 seed or nut flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 eggs
- 3 tbs seed or nut oil + extra
- 270 ml coconut milk
- 1 1/2 cups water approximately
Method:
- Place bananas in a mixing bowl and mash until smooth.
- Sift; self raising flour and seed/nut flour, baking powder, cinnamon and nutmeg into same mixing bowl.
- Beat eggs in a separate bowl.
- Add; eggs, oil, coconut milk and 1 cup water to banana/flour mixing bowl.
- Mix ingredients together, adding extra water as needed, until combined and smooth.
- Gently mix in blueberries.
- Add extra oil to a fry pan then ladle drops of the mixture into the pan and cook for half a minute or until bubbles appear on the surface. Turn over and cook other side for 1 minute until golden.
- Eat as is or with maple syrup etc
I made these last week using our Sunflower and Almond Oil. They didn't last as long as I want them to as I couldn't stop Luka from eating them.
