Cocoa Nut and Seed Granola

This recipe uses a range of Pepo Farms beautiful nuts and seeds combined with buckwheat to enhance the protein profile and slow release energy boost of this awesome breakfast mix. The addition of cocoa gives a decadent touch - It didn't last long at home! Pair this granola with seasonal fruit and yoghurt of your choice for a delicious and nutritious start to the day :)
This granola is:
- Gluten free
- Protein rich
- Full of long lasting energy
- Low GI
- Simple to make!
You'll need:
- 1 cup of mixed nuts, chopped (I used new season walnuts and hazelnuts)
- 1 cup of seeds (pumpkin seeds, sunflower seeds)
- 2 TBSP small seeds of your preference (chia seeds, linseeds etc)
- 1 cup of raw buckwheat kernels
- 1 cup boiling water
- 1 TBSP cocoa or cacao of your choice
- 1 tsp cinnamon
- 2TBSP melted honey or maple syrup
Method:
- Gently mix buckwheat with 1 cup of boiled water and set aside for 30mins to soak
- Preheat oven to 150C degrees
- Add all other nuts, seeds and spices to a bowl
- line 2 large oven trays with parchment paper
- After 30mins drain the buckwheat and add to the mixture in the bowl with the melted honey/maple syrup.
- Mix thoroughly then transfer to the oven to bake for 30-40mins. Carefully take the trays out halfway through baking to mix around with a spatula to ensure even baking.
- Once cooked to your liking leave out to cool then enjoy!
- Can be stored in an airtight container for a up to a month
