Whether you're hosting a Grand Final party or just looking for a quick and tasty snack for movie night, sausage rolls are the perfect choice.

Warming and buttery, these sausage rolls are divine!

Ingredients:
  • 500g minced meat (beef or pork - but not the lean options!)
  • 1 small onion + 1 stick celery + 1 small carrot (blitzed in food processor)
  • 2 rashers of streaky bacon (minced into tiny cubes with sharp knife)
  • 1TBSP sunflower oil
  • 1/2 cup seed or nut flour of your choice
  • 1 egg for sausage mix
  • 1 egg lightly beaten for egg wash
  • 2 TBSP parsley
  • 2 tsp dried oregano
  • 1 tsp paprika or fennel seeds (paprika best with beef, fennel best with pork)
  • 1 tsp salt & desired freshly cracked pepper to taste
  • 3 puff pastry sheets (cut in half)
  • 2 TBSP crushed seed or nut of choice
Instructions:
  1. Add sunflower oil to a saucepan over medium heat and Gently sweat the blitzed onion & celery for 2 mins then add bacon and cook for a further 2mins. Put into mixing bowl and allow to cool 
  2. Add the mince, seed or nut flour, 1 egg, herbs, salt and pepper to the mixing bowl with cooled onion, celery & bacon. Mix with hands until fully incorporated
  3. Divide mixture into approximately 6 portions and roll each into a log the length of halved puff pastry
  4. Lay the roll of filling just below the halfway point of the long edge of each sheet then brush one longe edge of pastry with egg then roll up tightly with seam side down
  5. Using a sharp knife cut each roll into 6 even pieces for small OR 4 even pieces for large and place on lined oven trays.
  6. Brush rolls with lightly beaten egg then sprinkle with crushed seed of choice
  7. Bake for ~30minutes, until pastry is golden brown. If baking from frozen allow to defrost in fridge first or add extra 5-10mins to cooking time
  8. Allow to cool for 5-10mins on wire racks and then serve up and watch them dissapear!
