Pepo's Savoury Granola

The perfect herby & slightly spicy topping for your Summer salads, sprinkled over roasted vegetables or dips. Also makes a great bar snack alongside your favourite beer or wines. This mix is customizable with your favourite nuts and seeds and will definitely elevate plain salads with protein, fibre, healthy fats and plenty of flavour!
This recipe is:
- Gluten Free
- Nut free option
- Vegan
- Rich in protein, healthy fats, magnesium & selenium
You'll need:
- 1 cup raw pumpkin seeds
- 1 cup raw sunflower seeds
- 1 cup of walnuts broken into smaller pieces (for nut-free option use extra cup of sunflower seeds or chia seeds or flaxseeds)
- 1 TBSP fennel seeds
- 1 tsp of salt
- 1/2 TBSP dried oregano
- 1/4 tsp chilli powder
- 1 tsp of maple syrup
- 2 TBSP Sunflower oil
Method:
- Preheat oven to 175C
- Put all dry ingredients into a large bowl and mix with spatula
- Add sunflower oil and maple syrup then mix again
- spread evenly over a large baking tray lined with parchment paper and bake for ~20mins or until golden brown (take tray out halfway through to stir.
- Cool on a wire rack then transfer to glass jar
- Add to salads or roasted veggies or consume by the handful with a cold high country beer
