Pepo's Proscuitto Melone with Bocconcini

Minimal ingredients, maximum flavour! This dish epitomizes Summer and can be whipped together in just 10mins. Sweet, salty, refreshing and complimented by the rich, toasted flavour of Pumpkin seed oil. Pepo's take on an Italian classic
You'll need:
- 1 Rock melon scooped out in balls or cut into small pieces
- 200g small bocconcini balls or mozzarella torn into smaller pieces
- 30g of prosciutto torn into bite sized pieces
- 1TBSP pumpkin seed oil
- A drizzle of really good balsamic glaze (we like Rich Glen's blood orange balsamic glaze)
- small handful of basil or mint for garnish
Method:
- Layer the rock melon, prosciutto and bocconcini in a large shallow serving dish and garnish with the basil/mint before drizzling in pumpkin seed oil & balsamic glaze. Serve immediately
- Alternatively you could portion these into small serving bowls/glasses for individual portions and guests can drizzle their own oil and glaze at the table
