Pepo's Lunchbox Recipe ideas

Here you'll find a range of simple recipes that the kids will love! Fill their lunchbox with delicious morsels using nutritious ingredients from the Pepo Farms range. These simple & cost effective recipes can be made in large batches for multiple lunches throughout the week. There may even be a few ideas to keep your work lunches interesting!

Nut Free Muesli bars

 You'll need:

  • 1.5 cups oats
  • 1/2 cup coconut flakes (lightly toasted in a non stick pan)
  • 1/2 cup natural or roasted pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/3 cup honey
  • 1/4 cup coconut oil
  • 1/2 cup sultanas or cranberries
  • 2TBSP brown sugar
  • 1/4 tsp fine salt
  • Optional 30g dark chocolate for drizzling on top

Method:

  1. Grease and line a small baking pan for with baking paper
  2. Combine all ingredients except honey, coconut oil and brown sugar in a large bowl and mix to combine
  3. Add honey, coconut oil and brown sugar to a small saucepan and cook over medium heat until fully combined and bubbling
  4. Pour honey, oil, sugar mixture into the large bowl with dry ingredients and mix until thoroughly combined. Leave mixture for 5mins
  5. Spread mixture into prepared baking pan and spread out evenly to all corners using a spatula
  6. Optional step: cut chocolate into small pieces then place in a microwave safe bowl and microwave in 30s increments until runny. Hold the bowl with a tea towel and use a spoon to drizzle the chocolate over the top of the slice. Refrigerate for a few hours
  7. When fully set remove from the pan and slice into ~16 slices

Pepo's Gluten Free Zucchini & Cherry Tomato Slice with Basil

You'll need:

  • 1/2 cup Gluten free flour
  • 1/2 cup of Pepo's Sunflower Seed Flour/Pumpkin Seed Flour
  • 1tsp baking powder
  • 1 brown onion diced
  • 1 large zucchini or 2x small zucchini's
  • 2TBSP Pepo's Sunflower Oil
  • 1 cup coarsely grated tasty cheese
  • 5 eggs lightly whisked
  • 1/4 cup of any milk
  • 1/4 cup of Sunflower Oil
  • 250g cherry tomatoes halved
  • A big bunch of basil (finely sliced)
  • 1 tsp smoked paprika (1/2 in the mix and half for the top)
  • grated Parmesan cheese for the top

Method:

  1. Preheat oven to 180c. Line an oven proof dish with baking paper (approx 20cm x 30cm with enough height for rising)
  2. Heat 2TBSP sunflower oil in a saucepan over medium heat and cook onions until they have softened and slightly caramelised
  3. Add grated zucchini, 3/4 of tomatoes, basil, cheese, egg, milk, oil and 1/2tsp of paprika to a large bowl, mix until incorporated
  4. Sift flours & baking powder into mix ensuring all baking powder passes through. mix until incorporated
  5. Pour batter into prepared dish then push remaining tomatoes just into the surface of the batter, sprinkle top with parmesan and remaining paprika
  6. Bake for 30-40 mins or until an inserted knife comes out clean 

Cheesy Trail Mix (nut free)

You'll need:

  • 1 cob of Kennedy's popping corn
  • 1/4 cup of raw or roasted pumpkin seeds
  • 1/4 cup of shaved coconut
  • 1TBSP of savoury yeast flakes
  • 1/2tsp fine salt
  • optional: sunflower oil spray dispenser

Method:

  1. Make popping corn according to packet instructions
  2. Meanwhile blitz savoury yeast flakes into a fine powder using a small food processor 
  3. Place all ingredients into a large bowl
  4. Optional: if you have an oil spray dispenser lightly spray the mix in sunflower oil (this step helps the seasoning to stick but it isn't essential)
  5. Mix all the ingredients together and then transfer to a glass jar or dispense into containers ready for lunches

Date Bliss Balls (nut free)

You'll need:

  • 1 cup of Pepo Farms seeds (pumpkin & sunflower seeds)
  • 1/2 cup of sunflower flour or pumpkin seed flour
  • 8-10 medajool dates roughly chopped
  • 1/4 cup good quality cocoa powder
  • 1/2 tsp salt
  • optional toppings: desiccated coconut, blitzed pumpkin seeds, cinnamon, freeze dried blueberry powder

Method:

  1. Blend the seeds on high in a food processor until fine consistency
  2. Add 8 dates, flour of choice, cocoa & salt and process until mixture clumps together
  3. Test by squeezing a small ball of mixture in your hand to see that it will roll into balls easily.
  4. If mixture doesn't hold together enough add another 1-2 dates and a tsp of room temp coconut oil then process again
  5. Roll heaped tablespoons of mixture into balls then refrigerate for at least 20mins to set
  6. Roll into your desired toppings and then keep refrigerated in containers
