Pecan Orange & Poppy Seed Muffins

These delightful muffins are moist, nutty and just sweet enough. Perfect for entertaining!

These muffins are:

  • gluten free
  • protein rich

You'll need:

  • 2 large oranges or 3 mandarins
  • 5 extra large eggs
  • 250gm castor sugar
  • 4 TBSP poppy seeds plus extra for garnish
  • 1 tsp vanilla bean paste/ or vanilla extract
  • 250gm The Artisan Mills Pecan Flour

Optional Icing:

  • 150gm icing sugar
  • 2-3 tbsp water


  1. Place whole oranges or mandarins into microwave safe bowl and cover with cold water. Microwave for 15 minutes
  2. Remove oranges or mandarins from water and cut into pieces. Ensure that you remove all of the pips as these are bitter
  3. Place chopped fruit into food processor or blender. Blend until smooth. (steps 1-3 can be done ahead of time if required)
  4. Place eggs & sugar into the bowl of a stand mixer. Using a whisk attachment, whisk/beat until pale and tripled in volume.
  5. Reduce the speed to low and add the vanilla.
  6. Add the orange puree a spoonful at a time ensuring that you do not knock the air out of the egg mixture.
  7. Add the pecan flour and poppy seeds, gently folding to combine. Be gentle!
  8. Preheat oven to 160°C. Line muffin pan or 22cm cake tin. (Turning your oven on once you have mixed your wet and dry ingredients allows the protein in the flour to absorb some moisture ensuring that your cake will rise properly)
  9. Gently spoon your mixture into prepared muffin tray or cake tin.
  10. Bake muffins for approx. 25 minutes/ cake 40 minutes or until skewer inserted comes out clean. Allow to cool


  1. Whisk icing sugar and 2 tablespoons water together until smooth. Add a little more water to get a smooth flowing consistency.
  2. Drizzle over muffins or cake
  3. Sprinkle extra poppy seeds over cake if desired while the icing is still wet.
  4. Garnish with edible flowers if desired & enjoy with a tea or coffee!
