Hazelnut Plum Chocolate Cake

This sweet, nutty cake is balanced by the the rich fruity flavour of the plums. Superb with a cup of tea!
Ingredients:
- 1 cup plain flour plus 2 TBSP
- ¾ cup Artisan Mills Hazelnut Flour
- ¾ cup Cocoa powder
- 1.5 cups brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ½ cup Artisan Mills Sunflower Oil
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 1-1.5 cups milk approx.
- 450gm jar stewed plums or tin plums in juice
Method:
- Sieve flours, cocoa, salt, baking soda and baking powder into bowl.
- Blend or puree 350gm of plums, place into large bowl. Slice/ chop left-over plum and scatter in the base of a lined cake tin.
- Add oil, eggs vanilla extract and 1 cup of milk to pureed plums, mix to combine.
- Add dry ingredients and mix well.
- Let mixture rest for 10 minutes while you pre-heat the oven and prepare your cake tin.
- Depending on how much liquid was used in the plums you may need to add more milk to your cake batter.
- Pour cake batter over plums. Bake for approx. 1 hour until inserted skewer comes out with just a couple of crumbs attached.
- Allow your cake to cool slightly. Place a plate or chopping board on top of your cake and carefully flip it so that it is upside down. Serve warm or at room temperature.
