Grilled Halloumi & Cherry Tomato Salad With Crunchy Seeds

Grilled Cheese! That little bit of caramelizing makes all the difference. Paired with a medley of sweet cherry tomatoes, rocket, toasted seeds and our rich pumpkin seed oil this salad is a summer winner!

This salad is:

  • Vegetarian
  • Gluten Free
  • Good source of protein, healthy fats & fibre
  • loaded with micronutrients including magnesium, zinc and selenium 

You'll need:

  • 1 portion of halloumi
  • 1 large varied colour tomato medley punnet
  • 1 large bunch of rocket 
  • 1 handful each of raw pumpkin seeds and sunflower kernels
  • 1TBSP sunflower oil for cooking
  • Few pinches of dried herbs (oregano/rosemary/thyme)
  • 1/2 tsp each of paprika, onion powder & garlic powder
  • Salt and pepper to taste
  • Pumpkin seed oil for drizzling

Method:

  1. Take halloumi out of the packet and sprinkle each side with most of the herbs & spices.
  2. Heat a small saucepan over low-medium heat, add half of sunflower oil and fry the halloumi gently for a few mins each side or until you reach a golden brown. set aside
  3. Add the remaining oil to the pan & sauté the seeds with the remaining herbs and spices adding a touch of salt and pepper, cook for 3mins or till lightly browned.
  4. Slice all the tomatoes except any very small ones
  5. Once cooled enough to touch cut the halloumi into small cubes.
  6. Assemble the salad with rocket on the bottom followed by halloumi and tomatoes. sprinkle with toasted seeds and drizzle liberally with pumpkin seed oil

Great as a side salad with any BBQ mains or as the star of the show!
