Green Summer Slaw

Sarah from Pepo's refreshing slaw has all the right elements for a Summer staple. Its subtly sweet, crunchy, tangy and simple to put together. Pairing our walnut oil with apple cider vinegar and a touch of maple is a winning dressing combination. Enjoy!

You'll need:

  • 1/4 large green cabbage (finely sliced or 3mm setting on mandolin)
  • 3 green apples (finely sliced or 3mm setting on mandolin)
  • 1/2 fennel (white section cored and finely sliced or 1.5mm setting on mandolin)
  • 3TBSP walnut oil
  • 1TBSP apple cider vinegar
  • 1tsp maple syrup
  • Large handful of toasted walnut kernels (roughly chopped or whole depending on preference)
  • salt & pepper to taste


  1. After carefully slicing all ingredients put in a large mixing bowl and mix to combine
  2. Mix oil, vinegar & maple syrup in a little jar or jug
  3. Drizzle dressing over the slaw ingredients add a couple of pinches of salt and cracked pepper and mix thoroughly
  4. Taste and adjust seasoning
  5. Transfer to a nice serving bowl & enjoy!
