Green Summer Slaw

Sarah from Pepo's refreshing slaw has all the right elements for a Summer staple. Its subtly sweet, crunchy, tangy and simple to put together. Pairing our walnut oil with apple cider vinegar and a touch of maple is a winning dressing combination. Enjoy!
You'll need:
- 1/4 large green cabbage (finely sliced or 3mm setting on mandolin)
- 3 green apples (finely sliced or 3mm setting on mandolin)
- 1/2 fennel (white section cored and finely sliced or 1.5mm setting on mandolin)
- 3TBSP walnut oil
- 1TBSP apple cider vinegar
- 1tsp maple syrup
- Large handful of toasted walnut kernels (roughly chopped or whole depending on preference)
- salt & pepper to taste
Method:
- After carefully slicing all ingredients put in a large mixing bowl and mix to combine
- Mix oil, vinegar & maple syrup in a little jar or jug
- Drizzle dressing over the slaw ingredients add a couple of pinches of salt and cracked pepper and mix thoroughly
- Taste and adjust seasoning
- Transfer to a nice serving bowl & enjoy!
