Green Goldess Vegan Dip

Featuring our beautiful pumpkin seed oil, known in Slovenia as Green-Gold. This dip also has the creaminess from avocado and beans together with the tang of apple cider vinegar and lemon. Delish!

This dip is:

  • Vegan & raw
  • Dairy Free
  • Nut Free
  • Full of fibre, monunsaturated fats, Vitamins C, E, B6 & K

You'll need:

  • 1 ripe avocado
  • 1 can of cannellini beans or other white beans of your choice (drained and rinsed)
  • 1/2 cup of roughly chopped dill
  • 1/2 cup of roughly chopped Italian parsley¬†
  • 2 green onions chopped
  • The juice of 1 large lemon
  • 2tsp of apple cider vinegar (or one of our other varieties)
  • 1/2 tsp maple syrup or a bit more if you prefer
  • 1TBSP of Pumpkin Seed oil
  • Salt and pepper to taste
  • 1/4 cup of water

Method:

  1. Chop all the ingredients required to be chopped
  2. Put all ingredients into a food processor and blend until smooth. add a little more water if its too thick. Adjust seasoning with more vinegar/lemon, salt/pepper or maple syrup.
  3. Put into a big bowl and enjoy! 

Great with corn chips, a sliced rainbow of vegetables etc!
