crunchy garlic & rosemary potatoes

Cooking potatoes this way requires a little extra effort but the crunchy exterior and garlic and herb infused oil makes it all worthwhile! We used pecan oil here but you could also use sunflower oil or almond oil. Adding 5 drops of Gamila's Saffron extract makes for a even more decadent flavour.

You'll need:

  • 2kg of brushed white potatoes peeled & cut into large chunks (5-6cm)
  • Fine salt
  • ~4TBSP oil (Pecan, Sunflower, Almond)
  • 4 cloves garlic minced
  • Good handful of rosemary or thyme finely chopped
Optional:
  • Small handful of seasonal herbs to garnish
  • 6-8 drops of Gamila Saffron extract

Method:

  1. Preheat oven to 200 degrees on convection
  2. Heat 2L water in a large pot until boiling
  3. Add 3tsp fine salt and potatoes and return to boil then reduce to simmer
  4. Cook for approximately 10mins (until a knife meets just a little resistance when inserted into potato)
  5. Whilst the potato is cooking put a saucepan over medium heat with your preferred oil, minced garlic, rosemary and cook stirring frequently until garlic crisps up and becomes golden.
  6. Strain the oil with a fine mesh strainer into a large bowl and set aside the garlic & herbs
  7. Once the potatoes are cooked, drain the water but allow them to rest in the pot for 1min to evaporate remaining moisture
  8. Transfer potatoes to bowl with infused oil, season with fresh cracked pepper and some more fine salt to taste and add saffron extract if using. Toss to coat and shake the bowl to rough up the potatoes forming a paste-like exterior - this rough exterior is the key to super crunchy potatoes!
  9. Transfer to a large baking tray lined with baking paper, spreading out evenly and roast for 50-60mins. Every 20mins remove the tray carefully from the oven and using a spatula flip the potatoes and shake around to ensure even cooking crisping up and browning on all sides.
  10. Once evenly cooked mix potatoes in a large bowl with minced garlic + rosemary mixture + chopped parsley plus extra salt and pepper to taste if needed.
  11. Serve and enjoy immensely!
