Coleslaw with Egg Free Mayonnaise

You don't have to be vegan to enjoy this traditional salad with your own mayonnaise. We like to add a bit more to it too!
You'll need:
- 4 cups finely shredded cabbage
- 2 cups finely shredded raw brussels sprouts
- 1 large carrot, grated
- 1/2 small red onion, thinly sliced crosswise
- 5 Tbs Avocado Mayo - Egg Free recipe.
- (optional) sprinkle sunflower or pumpkin seeds on top to garnish.
Method:
- In a large bowl mix together the shredded cabbage, shredded Brussels sprouts, carrot, onion and dressing.
- Add avocado mayonnaise.
- Refrigerate until chilled, about 10 minutes.
- Transfer to a medium bowl to serve.
