Caprese Salad with Sunflower Oil

This salad is great with homegrown or heirloom tomatoes and fresh basil leaves. A twist on this famous Italian salad.
You'll need:
- 300g tomatoes thickly sliced
- 100g fresh mozzarella sliced
- 1 Tbs lemon juice
- 2-3 Tbs (drizzle to suit) sunflower oil (or walnut oil is great too)
- 1/2 cup basil leaves
- good pinch salt
- pepper
- (optionall) sprinkle with some pumpkin or sunflower seeds
Method:
- Put lemon juice, sunflower seed oil and salt in a jar then shake to mix.
- Display tomatoes, cheese and basil on a plate or serving dish.
- Drizzle with dressing.
- Spring cracked pepper and seeds over the top.
