Caprese Salad with Sunflower Oil

This salad is great with homegrown or heirloom tomatoes and fresh basil leaves. A twist on this famous Italian salad.

You'll need:

  • 300g tomatoes thickly sliced
  • 100g fresh mozzarella sliced
  • 1 Tbs lemon juice
  • 2-3 Tbs (drizzle to suit) sunflower oil (or walnut oil is great too)
  • 1/2 cup basil leaves
  • good pinch salt
  • pepper
  • (optionall) sprinkle with some pumpkin or sunflower seeds

Method:

  1. Put lemon juice, sunflower seed oil and salt in a jar then shake to mix.
  2. Display tomatoes, cheese and basil on a plate or serving dish.
  3. Drizzle with dressing.
  4. Spring cracked pepper and seeds over the top.
