Berry Smoothie with Pumpkin Seed Flour

Pumpkin seed flour provides an excellent source of natural plant based protein, vitamins and minerals - perfect for adding to smoothies and anything else that would benefit from a nutrient boost. This gluten free and vegan smoothie is a great way to start your day providing slow release energy to keep you fuelled for the morning. You could also add any wholegrain, nuts or seeds to provide more fibre and thickness to your smoothie. We always keep a variety of frozen fruit at home so we are ready for a refreshing smoothie without having to add ice & dilute the flavour.

makes 2 serves

This smoothie is:

  • high in protein & fibre
  • slow release carbohydrate
  • full of vitamins & minerals including zinc, magnesium, iron, potassium
  • good for your gut: prebiotics and probiotics
  • gluten free
  • vegan

You'll need:

  • A good blender to get a really smooth texture
  • 1/4 frozen medium sized banana
  • 1/2 cup each of blueberries & raspberries
  • 2 heaped TBSP of favourite yoghurt (I use coconut yoghurt)
  • 2 TBSP of pumpkin seed flour
  • 1/4 tsp of cinnamon
  • 1 cup of your favourite milk (I use almond milk)
  • optional drizzle of maple syrup or vanilla extract if you like it sweeter

Method:

  1. Ensure all the ingredients are small enough for your blender
  2. Add to the blender and blitz a few times until everything is incorporated and you have achieved a smooth texture
