Chunky Avocado & Corn Salsa

Zingy, creamy & full of healthy fats. This chunky salsa is great with corn chips or add to your next taco!

This Salsa is:

  • Gluten free
  • Plant based/Vegan
  • Rich in fibre, mono & polyunsaturated fats

You'll need:

  • 350g of avocado cut into small cubes (roughly 2 large avocadoes)
  • 1 small red onion halved and diced finely
  • 1 small cob of corn kernels or approx 1/2 tin corn
  • 3 TBSP Apple Cider Vinegar
  • 2 tsp maple syrup
  • 1/4 cup almond oil or pecan oil or hazelnut oil
  • 1tsp dried chilli flakes
  • 1 handful of coriander (stems & leaves)
  • the juice of 1 small lime
  • salt & pepper to taste


  1. Combine the red onion & vinegar in a jar or deep bowl to marinate for 10mins
  2. Put diced avocado, corn chopped coriander into a mixing bowl
  3. Mix the 2 tsp of maple syrup, 1/4 cup of oil, 1tsp dried chilli flakes, juice of one lime with the vinegar & red onion and a good pinch of salt and pepper. taste mix -  seasoning/sweetness to taste
  4. Mix dressing into the avocado mixture until incorporated. Taste & adjust seasoning if required
