Australian Seed Crackers

Have you ever scanned the shelves at your local shop for a seed cracker with only Australian grown seeds? I'm sure its not only me that wants to buy and eat local grown products! If you feel the same way here is a recipe for you. Its simple to whip together and you can mix and match your favourite Aussie seeds. Best of all is that this cracker doesn't discriminate! Being nut free, gluten free and dairy free anyone can enjoy these crackers. Many thanks to one of our fantastic customers Lisa for the recipe inspiration :)

These Seed Crackers are:

  • Gluten Free
  • Dairy Free
  • Nut Free
  • Rich in protein, fibre, essential fatty acids, vitamins and minerals
  • Simple to make!

You'll need:

  • 3 cups of mixture of Pepo Farms pumpkin seeds and sunflower seeds
  • 1 cup of Australian chia seeds
  • 1/3 cup of Australian flaxseeds
  • 1/2 tsp Australian salt
  • 2 TBSP psyllium husks
  • 2 & 1/4 cups water
  • 2 tsp dried oregano or thyme or your favourite spices
Method:
  1. Mix all ingredients in a large mixing bowl (the psyllium and water will form a gel-like batter around the other seeds)
  2. Preheat oven to 150C
  3. Leave to thicken for 15-20mins
  4. Line two large baking trays with baking paper
  5. Transfer 1/2 mixture to each tray and spread using a spatula into thin layers no more than 5mm thick
  6. Bake in oven for 1hour until crisp and seeds have lightly browned.
  7. For neatly shaped crackers take trays out halfway through cooking to cut into even rectangles of your preferred size (carefully use a knife or pizza cutter)
  8. Remove trays from the oven and transfer to a wire rack to cool
  9. If you want a more rustic look you can break them into more uneven pieces once completely cooled.

These crackers go superbly with soft cheeses and dips. They can also be used as the base for a GF crunchy bruschetta :)
