Apple Crumble Slice with Seed or Nut Flour

Originally made with pumpkin seed flour, try any of our gluten free flours to make this tasty slice. 

You'll need:

BASE:
  • 90g butter
  • 1/3 cup brown sugar
  • 1 egg
  • 1 cup self raising flour
  • 1/3 cup APSC Pumpkin Seed Flour
  • 200g light sour cream
FILLING:
  • 1 x 425g tin pie apples
  • 1 tsp cinnamon
  • 1Tbs brown sugar
TOPPING:
  • 1/2 cup self raising flour
  • 1/4 cup APSC Pumpkin Seed Flour
  • 1/4 cup brown sugar
  • pinch salt
  • 1 tsp finely shredded lemon zest
  • 60 g butter
Method:
BASE:
  1. Beat butter and sugar
  2. Add eggs one at a time, beating well after each one.
  3. Fold flour and pumpkin seed flour mix into butter mixture alternating with sour cream; mix until smooth.
  4. Place into greased and lined 18cm X 28cm slab tin; smooth mixture and place filling evenly on top.
FILLING:
  1. Gently mix all ingredients together.
TOPPING:
  1. Combine flour, pumpkin seed meal, brown sugar and cinnamon.
  2. Rub in butter until mixture resembles breadcrumbs.
  3. Sprinkle topping over the filling and bake for about 45 minutes at 180°C.
  4. Cool in tin for 10 minutes before cutting and serving and adding whipped cream.
