Rice paper rolls with crunchy seed toppers, pumpkin seed oil & spicy mango dip

Rice paper rolls are a great vehicle for lots of your favourite flavours! whether you like meat, seafood or vegetarian options these can simply filled with leftover cooked protein options of your choice. Why not try some of our delicious nuts and seeds crushed to make tasty toppers, the spicy mango dipping sauce below or simply some pumpkin seed oil for dipping takes to take these tasty rolls to the next level.

These rolls are:

  • Gluten free
  • Vegetarian/Vegan option
  • Full of essential vitamins and minerals

For ~15 rolls you'll need:

  • Packet of rice paper sheets
  • Half a 250g packet of fine vermicelli rice noodles (cooked to packet instructions)
  • 1/4 head of red cabbage sliced finely
  • ~300g of cooked beef strips or leftover roast chicken or cooked prawn meat or strips of tofu (great marinade option below!)
  • handful of mint/Vietnamese mint/Thai basil or a mixture of these
  • 2x carrots finely julienned or spiralized
  • 1x cucumber finely julienned or spiralized
  • small dish of Pumpkin seed oil for dipping
  • dish of blitzed nuts or seeds (or seed topper recipe below)
  • bowl of mango dipping sauce

Easy Vietnamese inspired marinade for cooking the beef/chicken/prawn meat (marinate for at least 2hrs or overnight):

  • 1TBSP soy
  • 1TBSP fish sauce 
  • 1TBSP sunflower oil
  • 1tsp honey

For the spicy mango dressing you'll need:

  • 1x mango peeled and diced
  • 1 clove of garlic minced
  • 1tsp - 1TBSP sriracha hot sauce (depending on how hot you like it)
  • 1TBSP of apple cider vinegar
  • 1TBSP of lime or lemon juice
  • 1TBSP of maple syrup
  • couple of pinches of salt to taste

For the nut and seed toppers:

Method:

  1. Pre-cook your protein option and allow to cool before assembling rolls
  2. Make savoury seed toppers and/or blitzed nuts for dipping
  3. Get all your ingredients out in bowls ready for quick assembly
  4. For the Spicy mango sauce blitz all the ingredients together in a food processor and then taste to adjust salt, spiciness etc and set aside in a bowl
  5. Get large bowl of warm water and wet tea towel ready according to rice paper sheet packet instructions
  6. Wrap each roll with a few strips of protein option first, small amount of rice noodles, some of each of the vegetable strips, a few herb leaves and then roll according to packet instructions. (if this is your first time making rice paper rolls it will probably take a few turns before you get the hang of it. Don't let the sheets to soak too long as the damp tea towel will continue to increase their malleability).
  7. set aside rolls until complete or refrigerate if preparing ahead of time.
  8. Serve with any leftover herbs, bowl of dipping sauce, small bowl of Pumpkin seed oil, crushed nuts and seed toppers

Dip in sauce, sprinkle with seed toppers and enjoy! Yum!
